A Mexican Tribute

In honor of the fact that my 1 year anniversary of being in Ukraine is coming up, I made a Lydia staple tonight: homemade tortillas (recipe here).


I've made them quite a few times since being in Ukraine, and they almost take like the goodness that only comes from south of the border.  Let's be honest.  Tonight, I ate 3 {ok, 4} tortillas fresh off of the skillet.  With nothing on them.  Because they're that good.  And I called it my supper.  Sometimes, you just have to live in the moment.

The picture above is to commemorate the last time I had Mexican food on American soil in DC {the day before we left for Ukraine}.  It was fab, simply fab.  Only got 15ish months left until I can do that again :)  

Get ready for tomorrow's walk down memory lane.  It's gonna be a doozy... :)

I like good flour tortillas but it is rare that I actually get to eat one. I look forward to trying one of yours.
